Kamado Cooker Baking Dish... SUGGESTIONS?

Looking to cook some Beef Short Ribs. Most all recipes call for putting them in a baking dish with various liquids and sealing them up tight after smoking.

What kinds of baking dishes do you all use? Would my clear glass Pyrex style casserole dishes work? Any links to your accessory sites would be appreciated.

Pyrex works great. Cast iron even better.
Aluminum pan works too, and easy clean up.
 
I've never heard of using a dish...But, I do use a Cooling Rack to cook them on...The reason is because they are hard to move once they cook...They want to fall apart...So, to avoid this, I put them on a cooling rack to make it easier to handle them...My .02

Kind of another Smoke... then wrap with foil recipe... looks and sounds delicious! Loving this new toy... er ah.... appliance! :nod:
