Drum smoked fish tacos

here they are.

I use foil boats for the fish... it's icky when they flake and fall into the bottom of my drum. :p

I just sprinkle the fish (cod) with lemon pepper and add a plop of butter.

I didn't time them... just pulled them off the cooker when they flaked.

grilled the tortillas on the Pro...

then topped the taco with chipotle slaw and fresh pico...

That looks so good! I may have missed this somewhere but at what temperature did you smoke the pescados on the drum?

Makes me hungry....
Thanks Texas, I smoked them close to 300F. They didn't take long. :)
 
Texas Crutch Fish Tacos! Even pulled out the fine chinet.

Damn I love fish tacos, what wood did you use for smoke?

I know with salmon, when it flakes on the grill or gets in the cooker it takes a while to get rid of the funky fish oil flavor, foil is the way to go.

Thanks Brian, I used olive wood on these.. It was mild, I figured the spicy chipotle slaw was going to take over but it still came through. :)

Those are some great looking tacos!

I have never tried smoking fish myself...does it leave any residual flavors in the drum?
 
Anyday of the week, anytime of the day, I'd eet those blindfolded with my hands tied and my mouth gagged. :tongue:

[FONT=&quot]1/2 cup mayonnaise[/FONT][FONT=&quot][/FONT]
[FONT=&quot]1 lime, juiced[/FONT][FONT=&quot][/FONT]
[FONT=&quot]1 jalapeno pepper, minced[/FONT][FONT=&quot][/FONT]
[FONT=&quot]1tsp minced capers[/FONT][FONT=&quot][/FONT]
[FONT=&quot]1/2 tsp dried oregano[/FONT][FONT=&quot][/FONT]
[FONT=&quot]1/2 tsp ground cumin[/FONT][FONT=&quot][/FONT]

I have also used sour creme to replace the yogurt. I all ways use more than 1 jalapeno or serrano. It is a nice starter recipe, just right for fiddling around with. Hope you try it.

I've made fish tacos once with fried tilapia, that's what the restaurants where I've had them at use. Have you used other fish besides cod? I'm assuming that a mild white fish is what's generally used. Can't wait to try smoking the fish for my next homemade fish tacos.
