That's a lot of wood. Next time try more coal and less wood. It can be very hard to control temp with that much wood on a small fire

The same thing happens if I run minion meathod with less wood and more charcoal, the last 3 cooks I have ran minion with just 4 chunks the size of my fist and had the same temp swing issues

I have three blowers.
2 kinds of 10 cfm, one needs UdC=10-15, the other UdC=100
1 kind of 50 cfm UdC=100
try UdC as 15. When output green light is on, the blower must spin. If not increase UdC

If overshoot, you can also lower HdC from 100 to 80,60,40, just try it.

i will try this but i also feel like its a problem with my P,I,D settings, instead of leveling out the temp spikes it just keeps them perpetuating, but i do not really understand how to adjust P,I,D or which one to adjust first

Tune data of P,I,D is a process of trial and error.
There are many papers on Internet, which are much better than my broken English
Please search for it.
