Just wanting to double check the way we're thinking about this so...

We figure for 200 people we plan about a 4oz serving which leads to at least 50 pounds of finished product. (200 x .25 = 50)

Getting to the 50 pounds is where we want to double check things.

The total weight of finished product is the combined weight of all the ingredients.

So with...

33 pounds taters
12 pounds cheese
8 pounds sour cream
10 pounds of cream of chicken soup

...adds up to 63 pounds of finished product which will give us what we need right?
 
The only thing I can think to add to your example is to be sure that you are dealing with the same measures with regards to your serving and ingredient amounts. i.e. ensure that ALL amounts are measured as weight or volume and that you are not mixing these two units of measure. It appears that you have done that.
 
We always figure 1/4 pound of potatoes for each person----using that formula your 50 pounds of potatoes for 200 people is right on.
 
Thanks bizz. I corrected that in the recipe converter & got results that were slightly different.

Original for 10 people:
2 pounds hashbrowns
6 oz shredded cheese
8 oz sour cream
1 can cream of chicken soup

Multiplied for 200 people:
40 pounds hashbrowns
7 1/2 pounds shredded cheese
9 1/1 pounds sour cream
20 can cream of chicken soup
 
I figured so Chuckwagon.

I do not want to start out with 50 pounds of hashbrowns then add all the other ingredients and have way to much.
