Duke City Lamb Tikka Masala- w/Pr0n!

Had a hankering for Indian. Had some lamb on-hand from this past week.

Whipped up a Tikka Marinade - Link to recipe on Epicurious
- 3/4 tsp ground cumin (toasted, if you can)
- 3/4 tsp ground coriander (toasted, if you can)
- 1-2 Tbsp minced garlic from a jar
- 1-1.5 Tbsp minced ginger from a jar
- 2 Tbsp lime juice
- 1 1/2 tsp Kosher Salt
- 3/4 tsp Ground Turmeric
- 1/2 tsp Garam Masala (It's worth it to get good quality or grind your own)
- 1/2 tsp Black Pepper
- 1/4 tsp Cayenne Pepper
- Glug or two of oil (EVOO, Avocado, Vegetable... whatever you have handy)

Bit of ghee in a pan... diced onion. Cooked until translucent.
Bit of Mr. Patak's Hot Curry Paste.
Bit of minced garlic and minced ginger. Cooked until the kitchen smelled amazing.
Can of diced tomatoes + their juice.
Added in the lamb.
1/2 can of water. Simmering on low while CINCHOUSE handles the rice.
Stirring infrequently.

I usually make it myself - I was in the hunt for an English cucumber and some plain yogurt when this about jumped into my cart.

Great flavor, and a bit more "loose" than I'd choose. I think we'll get this again if we're not about to make our own raita. Even the munchkin jumped on this with haste.

CINCHOUSE cleaned a plate and came back quickly for seconds. Munchkin is sill working on hers (as is normal), but looks to crush a whole plate, plus some extra naan.

The air fryer makes quick work of some frozen banana samosas.

A mighty fine day on the high planes

We gave up life on the High Plains for life in the Duke City, albeit on the West Side, just South of the Petroglyphs.

Happy to call myself a Burqueño these days.
