Greetings from Toronto, Canada.
Had been using an ECB, but thought it time to upgrade.
Not quite done, but here is my first crack at a UDS build. Praise to Jake, Rocco, Miguel, Jorge and Jim for all the tools and help.
Now have to figure how to bring her down from 250 to 225. Any ideas out there?

What settings are your intakes when you're stuck at 250? Add a diffuser to get temps down if you've run out of adjustability in regards to air intakes. Looking at the pic the warped lid may be causing the problem. Try adding a lid locking ring to secure it and see if that helps/.

I just posted this in another thread, so I will cut and paste it here:

Something I had to learn, quit worrying about 225*. It's not a magic number. My WSM likes to run around 280*. Let it run where it likes. You'll have less grief trying to fight it and your smoker will burn cleaner / better.
 
Close down one or more of the intakes, wait 20-30 mins and check the temp. If there are no leaks it should come down quick. Depending on how many coals you lite and when you catch the temp on the way up depends on where your going to have to adjust from.
 
Run 250*. 225*'is Old Hat. 275* is the Best Everything BBQ Temp esp for Newbs.
I run 300* most of the time.

Best piece of advice I ever got about BBQ take what the pit give s you and adapt to it. If it wants to run 250 cook at 250 if it wants to run at 325 cook at 325 it all turns out the same you just get to eat sooner and consume less alcohol in the process.
