If you ask the sales person for some straight nipples they can "point" you in the right direction.

That is, provided the salesperson is straight. But do NOT get the nipples with the rings through them. They have a kink to them. And if you don't believe me, ask Norcoredneck!

The 3/4 inch nipples that I got from Home depot were black pipe gas. I used a 1 hole saw to drill the UDS. after a small filing to take off any burs, the 3/4 inch pipe threaded in fine.

not to continue the innuendo but went to home depot yesterday and couldnt find any steel pipe nipples. Does it have to be steel? What other materials would be safe to use?

I think that this is the nipple you need.

they should also have something similar in galvanized (not ideal) or black iron (ideal)

With the electrical conduit nuts...you will need to place them both on the same side of the close nipples to ensure a snug fit.

For the vents that aren't controlled by a ball valve, skip the pipe all together and just use magnets. We had one rust up on us and didn't realize it until we were lighting a drum @ 2 AM in the parking lot of the Topeka ExpoCenter. Needless to say, we weren't exactly thrilled. When I got home I cut them off w/ a Dremmel and replaced with fridge magnets. Works like a charm and don't have to worry about them rusting ever again.
