well.....it never got to tender. meat was still 196 when it got dark and I got hungry. my fault. too much fiddli' and diddlin' with the cooker. not enough beer. anyway...here's what it looked like with a little broth brushed on .

have to say that the little bit of point that came with the cut was IMHO.....UH...........................SCHWEEEEEEET !
It will get me to persevere.

Hey. do I smell like smoke ?
