Here is the cart that was built for me. There is a Texas cook named Tony Chancellor who I first saw this concept with. Now that it's complete, there are some things I'd like to change and might as things progress.

Simple design actually. I welcome input on how to make it better.

Legs slide up and down and use set screws to lock it in.

Angle attaches the Party and the pipe slides into the female portion of the hitch receiver.

Wheels need to be tightened, obviously.
 
Looks pretty cool. I would be nervous with my pit sitting off the back of my truck but that is just me. I am sure it would work great.
 
Brilliant! That is way cool. I would use 4 wheels to make it easier to move around, but that's me I'm a big fan of the wheel. Those legs also look like a great way to keep it level when it's on the ground
 
That thing is sweet! Does it wobble back and forth at all? I've got a cart for my fatboy that I'm thinking about adding a tube to like yours so I could hitch-mount it, but I'm afraid of it swaying too much.
