Default Believe it or not I cooked yesterday

And I didn't bother with pron. Trust me, I really did cook though.

First, because my beloved Badgers had a late start I decided some Q was going to come into play for the game, so I picked up three racks of spares Friday after work. I was also going to do meatloaf so I grabbed 10 lbs of ground chuck (5 lbs to go in the freezer). As I was checking out, I saw tri-tips in one of the coolers! Never saw them at my meat store before, so of course I had to buy one.

First I trimmed the spares to St Louis style, rubbed them with some stuff I had laying around. One rack got Full Throttle Roadside Chicken rub that I got in a trade, one rack got Bayou Dirt, and the last got some home-made leftover rub I wanted to use up. They went on the WSM with Rancher and RO Chef's select briqs and a Piedmont pan setup, and the trimmings went on the bottom grate.

Prepped the meatloaf and put it in the fridge to set up. When the trimmings were done, I pulled them off and put the meatloaf on the bottom.

The tri-tip got rubbed with Montreal Steak and went on one of the old Bar-B-Q-Kettles indirect.

Let me tell you, that tri-tip is something else. I took it to about 130 (higher than I wanted) pulled it and let it rest. Sliced thin on an onion roll with horseradish sauce it was spectacular.

The ribs were perfectly cooked, but not as good as my comp ribs are (different rub).

I was so full, I only got a taste of the meatloaf before I put it away last night. I'll be having some for lunch in a minute.

To top it all off, I got to eat great Q while I watched the Badgers pull off the upset of the year.

What a perfect day.
