Default Sunday Ribs on the Kettle

I broke out my Cajun Bandit-inspired rotisserie ring yesterday for some ribs.
It was also the first time I got to use my new Inkbird thermometer for a long cook.

Started with a good dose of Plowboy's Yardbird.
After 3 hours, I wrapped them and used Malcolm Reed's method of margarine and brown sugar.

2 more hours wrapped and then about 45 minutes open.
They were pretty darn tasty if I say so myself. A little too fall off the bone for me, but that's how Mrs. Fan likes them.

I really like the Inkbird. I kept closing the app out of habit, so I wasn't able to get a graph of the whole cook, but I was very impressed at how well the kettle held temp, even though I would have preferred about 20* cooler. I hadn't monitored the grate temps before on this set up.
I ran a 3 briquette wide snake and some small cherry chunks. Got about 2 hours run out a the snake ~half way around the kettle.

Thanks for all the kind words on the ribs and the yard!
We definitely enjoy it back there. 3/4 acre, totally secluded, yet in the middle of town. We back up to several hundred acres of undeveloped park district property.
We regularly see deer, turkey, foxes, coyotes and of course plenty of squirrels, possums and raccoons.
