Fat cap up or down UDS?

First cook with the new UDS, doing a pork butt. Do you do them fat cap up or down? thanks!
 
The theory is cap down in a barrel to protect from the direct heat. The debate goes on and on and on and on....

And on.
 
trimmed. I take off the fat cap before cooking pork butt.

Brisket - down on a UDS to protect the meat.
 
depends if you respected the 24" rule or not. if you are short for distance then you definitely want it down.
 
down... I mean up... welll... lets see... down, yes, definitely up. what am I talking about .... I don't have a UDS.... lol the debate rolls on, but I would try it down first and see how it goes.
 
I surrender. Never cooked anything with the fat down. Either fat up or turn every so often. Next butt goes fat down all the way!:eek:
 
I cut the fat cap loose except for one edge, so I can slather and rub underneath it. Then I lay it back down, and cook fat side down.
