Default Wish me luck...

Doing a huge tailgate this weekend (50+ people) for the Michigan State at Michigan game. I ordered 25 racks of spares and 2 turkeys. The weather is calling for 50% chance of rain before noon, then mostly cloudy with highs in the mid 50's. The game starts at 3:30 and they won't let us in to set up until 6 a.m. which means the first Bloody Mary won't happen til 6:05, just after I get the fire going.
It's the first major cook with the new Monster offset and I'm a little nervous. I'm going to apply a rub just prior to putting the ribs on and I don't think I'm going to foil them, but instead just keep moist with a mop sauce/sprayer (they were too moist and fell apart when I picked them up last time I foiled). Serve 'em dry with home made BBQ sauce on the side.
Pull the turkeys at 165, carve'em up and stand back.

Well wishes and/or advice is welcome.

A good ez-up is going to be your friend, if it rains it will kill your pit temps in a heart beat. Im talking from a little expierence here.
