Smile My smoke today - Beef Short Ribs - Pron - added Finished Pron

As some of you know, I sold my Bandera and as of a result of posting it for sale on this site, you all have been driving me out of my mind with your Pron!

So I have kicked up my Smoking on my modified $4.00 baby weber.

I can not get good beef ribs and any "chain" store here, so while I was out on a Pet Sitting run in the country, I stopped at a meat processor and got "short beef ribs" for $4.70. And ten lbs of "dog bones" for $6.70, dogs here rule!

Here is some Pron, they are not done yet, will post the final results later.
Pron order.
1. Defrosted
2. On the grill rib temps @ 33 F
3. Baby does her thing.
4. 3 hrs into smoke, small one @ 167, big one @ 161, taters in foil.
Drool on key board not shown!

Done Porn added!

5. Good smoke taste, meat next to the bone was the best, duh! (like great Brisket)
Pulled em off at 188 F and let rest for 25 min under foil tent. The Taters and highly modified Bush beans were great. Each time I cook after not doing so for a while, I forget that all cooking times and temps must be adjusted for the 6,700 ft altitude here because water boils at 199 F here VS 212 F at sea level. So you have to take meat off at lower temps other wise it will be over done....
6. This is the smaller one and will be lunch thursday!

Not sure how to get Pron descriptions below or above pics, could use some help on this.

never tried beef ribs. full or short. These look good. May have to try them.

Those look awesome!! I love me some beef ribs. They take some looking after to cook, but are worth it when you get the end result! Very nice!!
