You may remember my post on Tuesday about grabbing some $0.99 pork shoulder for a smoke this weekend. Well, they're trimmed, rubbed, and ready to put on the grill in a few hours.
It's 43 degrees right now and the winds from the nor'easter that bypassed us earlier this week are are gone. We'll see how my fire runs through midnight before deciding if I'm going to finish the thing overnight in the oven. Looking for a serve time of around 4:00 pm tomorrow. Expecting a bunch of sides as well as other proteins (smoked sausage, MOINK balls), so my sh!t is not devoured. The package weighed 14.5 lbs and ended up trimming 2-3 lbs of fat off 'em.

About an hour late. Workin' 250. Have my assistance for the next hour or so. gotta remember, I'm workin' in the dark. Prety damn bright LED in the lid.

Keep up the good work! I always do big butts overnight. Easier to keep em warm a few hours than to finish a cook in the middle of the night. Let us know....
 
Allright, I'm done for awhile. One hour and Temp is ok at lid level. We will see if it goes up. The last pic is Popdaddy's Hit Me Fred Sauce. We'll see how it tastes as it settles. A little sharp on vinegar right now. Had to cut by a 1/3. Translation plus the reduction in batch size was a b!tch. I hear a bourbon calling my name.

Remind me in the spring. Clean up your wood handles and put a little oil on'em.

3:30 Sunday morning. On the fire for about 8 hours and we're done smoking. Wrapped in foil and finishing in the oven on low.

Sunday afternoon @ 5:00. USA/Canada into overtime and getting ready to pull MOINK balls off for the ravenous guests. They were gone in less than 10 minutes.

6:00 pm and the butts out of the cooler and ready to be pulled.

I'm doing tha butt tomorrow. Already too late this time but should I be trimming that top layer of fat off i.e. on the left in the photo. I usually don't but am no expert just looking for tips and tricks for better Q

Some like that fat cap. Some dont. Some people around here will say you don't know "jack" if you cut it off. Fine for them. But it really doesn't add anything to the flavor, moistness, or tenderness. Removing it gives a nice area for rub and bark, and for the smoke to add some magic. I typically trim all the fat that is easy to get to.

Yes, this is my opinion (as if you didnt know that already).:smile:
 
Nice Butts! We just got some out of the freezer last week from our last smoke. Only one package left (~1 1/2#)
