Help!! I hope you guys can help save my dumb ass. I got a corn beef with the plan to smoke it today to make pastrami for tomorrow. Seasoned and put it on the UDS. 6 hours later with the internal temp at 190 and probing like butter, I took it off to rest. After an hour and a half going to put in the fridge for tomorrow. But I had to have a taste sliced a couple thin slices and the wife grabbed a piece and took a bite and said OH SALTY!!! I took a bite and tasted a salt shaker. Then it hit me, I didn't soak overnight to remove the salt. Now this is where you guys come in, how can I save it or am I going to have to admit failure and chalk it up for experience. The beer was good any way.
 
I did that a few weeks ago. I cubed most of it and simmered in sauerkraut to leach the salt out into the liquid, then served with taters. I shredded the rest of what was left and made chili. I left most of the salt out of the recipes of course. Hope that helps.
