Default Have today off...

And I haven't fired up the Egg in a while so today we are cooking a small brisket flat, a rack of back ribs, and a completely naked fatty.
Ron_L the fatty is your fault after seeing your throw down entry last night. I may just have to make some biscuits.

Pics, as if you don't know what a brisket, ribs, and a naked fatty look like..

It's always pork over beef for me...

Ribs and brisket rubbed down with SM Cherry... it's all sweet today..

Yep - just take it out of the wrapper and toss it on the smoker.
Some folks like to add a little rub.
Stuffed and bacon wrapped fatties are good, but naked fatties are delicious in and of themselves. If you've never tried one, give it a whirl.

Looks great!!!

I'm smoking a brisket tonight and may throw on a roll of sausage like that for my son's breakfast.

How long at what temp was the approximate time on the naked fattie? What internal temp were you shooing for?

Smoke ring looks great.

Thanks - do it!

Naked fatties go around 2ish hours at 250. I look for 165 - 170 internal.

Ron_L is a bad influence!
