Default chicken - two ways

I bought a whole chicken and then decided that that was a bit much for one.
I also bought some tins of tomatoes on special.
So, I came up with a cunning plan:


I seperated the legs and wings from the chicken and put them in a piri piri marinade <to be continued>


Cleaned out the remainder of the chicken and put aside for a bit.


Fried some onions and Thai red curry paste in coconut cream


Added the canned tomato


Browned the chicken on a fairly hot fire as it didn't need to be fully cooked


And added to the tomato onion mixture to cook fully.
Once I was happy with the consistency of the curry, I shredded the chicken of the bones and added back to the pan.
And we ended up with:


Pretty happy with the result ;)

The legs and wings were nicely marinating in a marinade made from paprika powder, smoked paprika powder, garlic, piri piri powder, red wine vinegar, some fish sauce and the secret ingredient

We are cold in the early morning's (about 11 oC) but it is warming up at day time (around 30 oC in the shade).


That Weber is a very old (I think) 47 cm Weber. The legs were loose/broken, so I used conduit pipe, bolts and washers to repair it.
It works :)
