Default Fajitas

Pintos from a can will make some pdg refried beans if you add a can of broth or water to the pot and throw a slice of onion, couple strips of jalapeno, and some epazote (fresh or dried) then boil hard till the liquid is gone. Before serving or mashing remove the epazote.



Believe it or not I went to a large Mexican grocery (Del Ray Farms) and they don’t carry the Fiesta brand fajita seasoning that I wanted to try in the marinade. What’s worst I went to another chain store that carries other spices in that brand but they didn’t have it either and I wasn’t in the mood by then to go to walmark so I said to heck with it and made up something I thought would work. I used juice of two limes and one lemon, 1/8 cup of taquila, some greek seasoning, and 4 cloves of garlic minced.



Always like onyawns, bell peppers, japs, and maters for the veggies and throw in the grated lime rind close to the end of the cook after the veggies and meat get combined.





The rice got replaced with some couscous with seasoned carrots and peas. I used some orange peel powder, thyme, granulated onion, salt, pepper to cook the canned peas and carrots with.



First time we use tequila in the marinade and can’t say that I could taste it in the dish but the fajitas were as good as I ever cooked. Tequila was pdg by itself too and that’s proly why I didn’t get around to the salsas I had planned to make.
