At what temperature do you foil a brisket at 160 or 170? Also what do you add to the brisket when foiling?

I normally foiled mine at 160°, but I'm starting to foil mine at a set time now (not temp).

I foil based on time as well. (for comps at least). Helps me keep to a timetable. I go 6 hours before I foil.

I shoot for foiling after it comes through the plateau and the color is about where I want it. Usually works out to about 170 for me.

We foil once the color is where we want it to be. That can vary from time to time but rarely exceeds 180.
