Another weekend cooking on the Ugly Drum and trying some new recipes.

Started the weekend by smoking 2lb salmon with hickory on the UDS and making a smoked salmon spread served on Melba toast.

Also cooked a couple of 7lb butts and made Becky's deep dish barbecue pie for the first time.

BBQ pie sounded gross to my youngest daughter so dad had to fix her a bbq baked potato like Famous Dave's.

All was good but I ate way too much.

Great looking spread! Ya think you can post Becky's deep dish barbecue pie recipe? Aaah man lookin good.
 
Who's Becky? Can we have the pie recipe? Why didn't you invite me? I would have helped you eat it up!

Mine was good but I will defiantly give kickassbbq smoked salmon mouse a try next time. Thanks for the link to your recipe.

Next time I do this I'll cut the tomatoes and jalapenos in half so it's not quite as hot and a little less soupy.

I will be making this and following your advice as I don't want it soupy as well. Thanks again great looking pron.

That looks awesome

1-1/2lb fresh wild salmon smoked with hickory to 170°
8 oz. cream cheese, softened
2 Tbsp. BBQ sauce
2 tsp. lemon juice
1 tsp. prepared horseradish
1 tsp. worcestershire
1/2 tsp. salt
1/4 tsp. white pepper
1/4 tsp. liquid smoke
1 Tbsp. finely minced onion
1 Tbsp. finely minced jalapeno-seeded
sliced almonds


Smoke and flake fish. Blend everything thoroughly except for almonds. Chill several hours. Shape salmon mixture into a ball or loge. Roll in nut mixture. Chill. Serve as a spread with crisp crackers or toasted bread.
