Soup looks great, definitely a soup day in our neck of the woods.

Chicken stock 2X is not a mistake. Buckwheat noodles are BALi so added those as a thickener. Worked really well.

I have some buckwheat noodles and have noticed when added to soups/broths prior to cooking they do work as a nice thickener. Good idea.

That looks fantastic, Adams!

I love big chunky soups. Did you sweat any of the veggies first?

Yes sir

EVOO heated
Then onion
Then asparagus
Then mushrooms
Then garlic

Stirring constantly. Your post reminded me of another ingredient. I added two tablespoons of the jelly from the drippings of this Boston butt. I deglazed pan with chicken stock and added pork butt.

It's the mesquite part that's messing with my head.

That looks incredible! Never had buckwheat noodles, which I would try. My first thought after that was I bet pearl barley would be good in that.

We call it "stoup" around here. Stew-like soup.
