When I got home....
this was waiting for me
I can take a hint so I fired up the UDS. then trimmed and rubbed the ribs. I cut them in half to fit in the rack better. this was my first try at trimming ribs. What to do with the left over (flap meat?) I put some seasoning, mustard and sprinkled with brown sugar then put in with the ribs They are now in the drum with apple wood chunks. More pictures when they're done. Thanks for looking.

I do the same thing, I prepare the trimmings and cook them with the ribs.

I often use the rib trimmings in place of bacon in my baked beans recipe........
Makes for some darn good eats.

I took the trimmings off first, some were a little crunchy, but good.
the ribs the plate followed by a slice of watermelon.
