Bbq chicken cages???
So I have gotten away from my roots. I started my bbq on a cinder block pit with a metal storage rack for the grill. I'd love to build a permanent pit for grilling and smoking, but that may wait. Anyone have plans for chicken grill grates/cages? I want the skin to stay intact on the halves and avoid tearing while turning.

Naturally, I have no pictures and could find none. But, when I cooked for my church, we had these racks, based upon the racks use in Hawaii for Huli Huli Chicken. They were large rectangular racks, with rebar frames and wire mesh between the frames. The wire mesh was the deal, if you use rods, the skin sticks. If you use wire mesh, there doesn't seem to be enough surface area for the skin to stick. Plus, you are flipping the chickens in the rack, as opposed to handling them.

Chivetta's in Western NY uses them on many fundraiser cooks throughout the summer..
