Hey Guys,

I found a hind shank or two today, my apologizes as I didn't get a chance to snap a pic on the grill (I guess you guys know what a hot grill looks like :pray:) Anyway I smoked it with Olive chunks after marinating it with olive oil, lemon juice and Greek oregano... I served it with Greek rice ( I purposely serve this plate to my wife as she hates when I play with my food) :

I'd say I made a pretty good pyramid out of the rice.....:icon_shy

But this is my favorite appetizer, marinated (in salt) cucumber with balsamic reduction... The pipettes had aged balsamic, fresh mozzarella and tomato.....

Hey Tich,

It's a balsamic reduction, just boiled down balsamic vinegar... I kinda like it...
