Korean chicken breast and Spud salad
Korean chili paste, lemon juice, soy, sake, garlic, scallion and some onion and carrots and I woked it till it was soft and tender.
Matched it with potato salad and it worked a treat! East meets West baby!

Actually no, I don't think so...although it would still be great..
Thigh is my favourite but the cooking time here is perfect to get the veg tender yet with some bite, John, and the breast meat to be juicy and silky. Of course, you could cut the thigh finer but then you lose something too. I thought about it when I was marinating and when I ate it...because that is the curse isn't it, we all do it...and it was academic this time because I had used the rest of the whole chook for other meals and had the breast left. It was either this or Thai spicy peanut sauce and it is so hot here ATM the Korean lightness won out! That being said, you KNOW I am still going to try it just to see
