I attended a wine and food tasting event this weekend and saw a couple of pretty inventive cooking methods. First was an open fire with whole animals wired to metal rack leaning towards the fire. Among the items cooked were a whole hog, a lamb and even a cow, albeit a fairly small one. It was pretty impressive!
The other method simulated cooking a pig underground. The cooks weren't allowed to dig a hole on the property, so they used a wheelbarrow. They put hot rocks in the bottom, then dirt, banana leaves, the pig and vegetables, more banana leaves, a layer of canvas, then more dirt on top. This picture was taken just after the pig was taken out to be carved and served:
Overall a pretty cool experience!
