Looks great Matt! Sorry that I am not tech savvy enough to provide a link, but there is a recipe on the Food Network site that I bet you would like. Look up Tyler Florence's Baked Eggplant Ziti. It is awesome!
 
Sorry, but I don't need a break from bbq.

I get on a Bbq site to learn about bbq.

Not at all interested in end product only pics.

I want to know what you did, what you cooked on, what temp etc.

One of the biggest problems I have with this site is the threads with only the fancy pants plated pics.

They mean nothing to me.

Don't take this the wrong way, I just want to know how you got there.

Seems like too many people get on here just to toot their own horn.

Thanks everyone. Try for your next party. I have made twice and both times it's a hit. One batch makes a half tray. It's better with fresh mozz, but if you use pre-shredded i would only use like 16oz or less since that stuff gets weird/stringy when melted.
