Default Bratwurst help

I have been asked to do an Octoberfest event with bratwurst and kraut. Can the bratwurst be done a few hours ahead and held in beer/onion broth without the bratwursts shriveling up? If so how long if kept at temp in Cambro and then in chafers for service before quality suffers?

Any other ideas, I really don't want to pull the smoker and grill for just bratwurst if I can help it.

I'm from WI So... Grill your brat's and then add them to Beer,Butter,and Onions tub.Keep liquid at a slow simmer and your brat will hold for hours!! If you need help with brat brand selection I maybe able to help you there also.
