Default Ham...

Haven't been posting in a while so I thought I would contribute something recently done....like today. Had an order for a small ham....like 6lbs. I use bone in butts and remove the bone. Cured for 3 days then smoked with oak hot...like 300...till 145 internal. Let her rest and try not to tear a piece off before delivery. Hope everyone has been doing well.....
