Preheat oven to at LEAST 450 degrees
If you have a six inch cast iron skillet of corn stick/muffin pan coat the pan with oil (be generous) and heat it in the oven.
1 cup yellow corn meal
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup cooking oil
1 egg
Buttermilk to make batter
Mix the dry ingredients together.
Break the egg into the oil and mix well
Add to dry ingredient. Stir until moistened.
Add buttermilk until you get a nice smooth but thick batter.
Carefully pour the batter into the very hot, oiled, pan. bake in the 450 degree oven for about 20 minutes or until golden brown on top.
Recipe can be scaled for a larger amount
