BBQ Brethren Generosity
Dear Brethren,
SmokeJumper has sent me a care package with a capital C. Some of you might remember my post on Jerky. It was decided that I'd send 3 samples out to Brethren. SmokeJumper was the second to put up his hand and ask for a sample. It turns out that the Jerky I have sent over is pretty horrible, because when we were making it, we were so excited we forgot a few ingredients.. I've only sent it because I said I would, and also because I understand that there is a preference for some very dry jerky there... and this crap sure is dry...... So, anyway.... SmokeJumper (Robert) asked if I'd like to get something in exchange.. "sure, why not" I replied. But I was not expecting such generosity! Robs care package arrived today! 1. Some PECAN wood. Well, while we grow a lot of Pecan in Australia, I can't find the wood anywhere, so this is going to be awesome! 2. Those little Chiltepin Chiles... wooo HOOO!, I opened that little pack and they .... are .... farkin ... hot .... 3. The Casabel Chiles look like nothin I've ever seen before. I can hear the seeds shaking around in chilis... Oooooooh, I cannot wait to put these in my next dish... 4. A jar of Simply Marvellous Cherry Rub. Had a sniff of this and had an epiphany... I've smelt nothing like it, although it does appear to have a megatonne of Cumin in it. I'm gonna use this as the rub for MY FIRST Trigg Rib Smoke this weekend! 5. Ohhh Yes... 5. The Whiskey. I just googled this Whiskey.. what... they make 5 barrels a WEEK of this stuff... and it's in my Care Package...??? I am frankly humbled. Brethren Generosity in Spades.. Now, I need some advice on what to do with all these chilis!!!!! Help a brudder out!.... I need no advice on how to deal with that Whiskey though. Thanks Smoke Jumper.... The new lot of Jerky I'm doing is going to be a lot better... and A big slab of it is coming your way! Cheers! Bill

You better be sending some good jerky back Bill! That's awesome.
Any chance of sending a couple seeds up to Hill Top in an envelope? I'd love to try and grow some of those. |

Bill, I use cascabel chili's all the time in my rubs and Texas Red chili. I always make csacabel chili powder from them too, here's what you do. Open up all the chili's on a sheet pan or in a large bowl. Remove the seeds and save them to plant. Scrape off as much of the white ribs inside (placcenta) as possibles. Remove the stem saving as much of the meat of the chili as possible. Rip the chili into small peices. spread out on a sheet pan and place in a low oven, 200 or the lowest your oven will go. Cascabel chili's are dry but not dry enough to grind. They're still a bit leathery. 10-15 minutes is all it takes to toast them up. let the chili's cool and grind in a coffee grinder to powder. Use it on anything and everything. The cascabel is one of the best tasting chili's there are. You can also add the seeded stemed meat of the chili to a pot of stew or Texas Red. They will rehydrate and slowly disolve into the gravy. The chiltepins sould be stemed and whirled in a food prosessor for just a second to make flakes for a shaker bottle. They make the best red pepper flakes ever. Save some seeds and plant in the yard along a fence in full sun. Make sure you use so latex exam gloves while doing this. Drink one shot of whiskey before you start and one after you're done. Tips from the other Great South Land!

Wowie Zowie Bill! I just PMed you some recipes and then found this thread.
I'm glad it all arrived safely without customs taking anything out for an "import tax". Good to know that whisky can be declared as "Spices". As Zilla said above, the cascabels are a favorite and great in all kinds of dishes where you want to boost flavor without kicking up the heat. I sent a different batch of cascabel seeds to some friends this spring and a few managed to get plants going so I can send fresh seeds to interested brethren this Fall - just in time for your Spring Bill. The dried pepper seeds probably won't grow. One of my favorite uses of the chiltepins is in hot sauce. A favorite recipe (from Rick Bayless): 30 grams (1 oz.) chiles 4 tsp sesame seeds 2 tbs shelled pumpkin seeds - a.k.a. pepitas (optional) 1/4 teaspoon toasted cumin seeds or 1/2 tsp ground cumin 2 whole cloves (or fat pinch ground) 1 tsp dried oregano 1 tsp salt 2 large garlic cloves peeled and roughly chopped 3/4 cup cider vinegar 1. Stem the chiles, roll them between your gloved fingers to break free seeds, and break in half removing most the seeds (if you don't remove seeds you will still have a fantastic sauce - but it will be Chernobyl level hot). 2. Heat an ungreased skillet over medium low heat, add sesame seeds stir until light brown and popping,and toss into blender. Add pumpkin seeds to skillet and do the same. 3. Pulverize the cumin, allspice, and cloves in mortar or grinder and add to blender along with oregano, salt, garic, and vinegar. Blend until very smooth. This great hot sauce will keep on the counter for years. I pity the critter that tries to live in it. Enjoy the whisky! Stranahan's Colorado is one of the most unique and interesting micro distillery whiskies to be made in the States since the new explosion of craft Whisky. It is after noon there - why is the bottle still sealed??? Cheers!
