Default What is a Off Set Smoker

Can you guys pls explain what an Off Set is? I hear a lot of conversations, but I really don't know anything about them. Can you pls provide me with some pic's & explanations.

A cooker where the fire / heat source is "offset" from the cooking area. Thus indirect cooking

This is a classic.... Fire goes in the offset box on the left. Food goes in box on the right. Leads to "indirect cooking".

Absolutely but many will start off with a small base of charcoal and then set the wood on top. Some will add a new base of charcoal as needed and others will go wood only after the start.

Keep in mind that you can, and maybe already have, cooked offset in your Webers. Simply placing the fire on one side and the meat in the other will do the job. I do it all the time in mine.

Once I jumped in, I didn't know what an offset was either. Now, I own one. A reverse flow, at that. A reverse flow offset is different than the one pictured in, the way where the firebox and the smoke stack (chimney) are on the same side of the cooker. The cooker is bisected lengthwise under the cooking racks by a steel plate. That forces the heat and smoke to have to travel all the way to the opposite side of the cooker before making the 180 degree turn to go back, across the cooking racks, to the side of origin before exiting out the smoke stack. The bisecting steel plate, or baffle, heats up and radiates heat up, while hot air and smoke swirl around inside before exiting. It's just that easy.

Read on jpouchman. These halls (threads) are filled with information about all sorts of different smokers. Some swear that theirs is the best, but the truth is it's all in the preferences...and, what you can afford!
