Is it necessary to build a cold smoke generator in order to cold smoke in a UDS or can it be done using a very small fire with a heat diffuser like a terracotta saucer directly above it?

In the BGE world, people do that --- small lump charcoal fire in a coffee can in the bottom of the egg. If it gets too hot, they'll put ice in a drip pan.

Some folks smoke cheese by punching a hole in the side of a coke can with the top removed, sticking a 10 to 25 watt soldering iron in the side, and loading the can up with wood chips, and putting *that* in the bottom of their BGE. I guess this is really sort of building a cold smoke generator though...

Don't know why this stuff would not work with a UDS.

That's a lot of work and effort. Get one of these. Use your UDS or a cardboard box...

BBQ Grail- That looks like a great product thanks for the advice.

Another option is to get a steel strainer and then using a can or other round object raise the center of the strainer into something resembling a bundt pan. Fill the outer ring with hardwood cooking pellets leaving a gap and light one end. They will smoke but not heat your cooker.

Or for a few buck build a paint can smoke generator. Plans are on the Naked Whiz website.
