Default Boogaloo Down Funky Broadway: Night Train Brisket 'speriment II

Very similar to Brian Swamprb's thread but just the oven one here.
6lb flat, kosher salt, pepper, 275 for 5 1/2 hrs.
(forgot the early prep pics but here ya go from the initial out of the oven, after the broiler crispy trick and some slices for show.
Tasted great, pretty much like a good roast.
Certainly an interesting experiment.

Thanks for the post. Your slices look VERY 'fall apart'. Since this is an excercise in texture, do you think it went too far?

Was it in the oven for 5.5 hrs in the foil first? Or was it 5.5 hrs total including rest and broil?

To add:
5 1/2 in foil in oven
rest 1 hr.
Broil 'til crispy, very brief, cupla minutes...
rest 1/2 hour.
I crushed it.
(still rather tasty though)

Even west knows I cannot be held responsible for cooking the brisket and hour after I suggested.

God that looks so good though.

You can always dial back the feel too.
