30' "Gator" smoker
I recently committed to buying this smoker/grill. I was hoping to get some comments on performance expectations of it "as is". I am really buying this thing for the Wow factor. I know the firebox is very small but I am hoping I can utilize it in it's current condition for a little while. We plan on smoking about 50 to 75 pounds of product at a time. Any suggestions will be appreciated.

What kind of wow factor are you lookin for? You could hire a real cute girl to sit around and wow people for a lot less than it will cost to haul that big thing around. Unless your wife objects.

It will be pretty much stationary. It is basically just an attention getter. I am trying to get some feedback on this thing's being ability to function as a smoker.

well in my town it would be the shiznit. Our team is the fighting gators. I can say one thing, without a stoker there probably will be no hot and fast going on in that firebox unless you stock that puppy real good and use the forearm rule.

Yea it is HEAVY, it occupies a chunk of real estate and it is basically a novelty. This purchase is first and foremost to turn heads, to draw attention. A small landmark. I am not too sure how high I could get the temp. It has no thermometers, so that is a give away that no real smoking has been done on it.

Its a judgment call you will have to make. It definitely looks cool, but looks like it would be a pain in the rear to cook on. Depending on what you are cooking it may not be bad, really only one way to find out. That thing will be one heck of an attention getter

You could hook up a weed burner thru the hole in the gators mouth and have a fire breathing gator.

I'm not an expert but I do see a couple design flaws. I think in any pit the tighter the better. I'm not sure why it's there, but the front bottom door does not look air tight. I'm not even sure why it's there. Also it looks like the middle door always needs to be opened to get into either side door. That means more unneeded heat loss. Also like you mentioned the fire box does look small. A guru would help with that but you will be feeding it all the time. Those would be my major concerns. I hope that is what you were looking for.

I think it will serve it's purpose if you want to use it as a set piece to attract business to a vending site or restaurant. I also think the firebox looks small, also how large are the pipes that feed from the fire box to the smoking chamber? Is the hole in the mouth a third chimney? I guess since it looks like it can be shut, it does not matter. I bet you can get some cooks off of it and I imagine if you can cook, you can cook on it. I just think it will be more about show than go.

I think its cool, may want to make the fire box bigger, and perhaps weld the little mystery door shut. Making a giant gator pit was the hard part, putting in a few hours of modding to make it work well doesn't seem like a bad deal.
