Default Left over Sirloin tip roast from the weekend.....No problem!

So you've had tastey roast beef sammies since you cooked your sirloin roast back on Sunday, but you still have some left.....Then you've worked all day and want some simple fixin's for supper today.....

Slice your roast about 1/2" inch thick, and then cut into nice bite size pieces....Approximately 12-16 ounces.

Steam some brocoli until just fork tender, or perhaps a second before that, (needs to be still crisp). and then run under cold water to stop the cooking process. Shake off all water. Again about 12 ounces.

Boil some three cheese tortellini until just underdone...Run under cold water to stop the cooking process....Shake off all water...Again 12-16 ounces.

1/2 red onion sliced into slivers.....
1/2 red bell pepper sliced into slivers.
Sliced, brine cured black olives App. 1/4 cup.
Flat leaf italian parsley 1/4 cup or so.

Combine all ingreadiants in large bowl and mix it all up well..


Dressing- just a simple vinegrette:

1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1-2 cloves garlic,,,Finely chopped
Salt and course ground pepper to taste

combine all ingreadiants in bowl and whisk thoroughly.....Pour over salad and serve....I usually double the dressing just to make sure that there's plenty.
