I think you can rarely go wrong with a well cooked steak.
She does like steak, doesn't she???

I would do the steak if she likes it and it is something you do well. Me, I would do ribs because I don't cook steak often.

Smoked chicken (possibly beer can) - pulled for street tacos. Pickle some red onions - get queso fresco and some corn tortillas. Simple yet elegant.

If you make a good steak maybe go that route, but not directly on the coals caveman style. That might be a bit over the top to her eyes. Save all that Q "showing off" for down the road.
A spatchcock chick with roast red potatoes and a veg might be another good route. Nothing like a nice roasted chick with some good sides.

NOOOOO!!!! First date? She probably won't want to eat much (in front of you) on a first date; however, if you've known her awhile and know that she loves a big hunk of seared flesh, then maybe; but only if you kill at steaks - otherwise keep it simple and dazzle her with the little details.
I'm with J-Rod on the roasted chicken (maybe cornish hens?); add some great sides, a nice wine pairing, over the top dessert (small) and save the killer steaks and Q for later...and good luck whatever you do!

Turf and surf! Get a nice piece of salmon or perhaps some shrimp to grill next to that steak. One or the other is sure to please her. I'd do some veggies like sliced spuds or broccoli or whole carrots as well. (Asparagus in season MMmmm!)
I wouldn't go into this with the thought of testing her but rather trying to please her. You'll know soon enough whether she's a keeper. But what do I know. I haven't been dating for 39 years. (SWMBO wouldn't approve!)

Id say thighs prep em small so it not to much for her to handle with a sweet sauce but do not over sauce. with a cold pasta salad and some asparagus or whole green beans baked with garlic and little parmasean.
