I purchased some seasoning mixes and made and stuffed my first sausage. I did sweet Italian and Kielbasa(sp?) I also made some bulk breakfast sausage (this was a recipe and I mixed my own spices). I was impressed with it all and it was a great deal of fun. I didn't smoke any (hard to build a fire in a thunderstorm) maybe I will try that next. This really wasn't my first batch as I have made some summer sausage a few months ago and it turned out pretty good. If you've never made sausage give it a try. I will probably continue to use the pre-packed seasonings and just make some additions as I go along.

Made some sausage myself last year. Good stuff. Made breakfast sausage and italian sausage. Didn't do the stuffing thing yet, just made bulk. Definately a winter project for me. Will probably make lots more this winter, and will try stuffing this time.
 
I hava also started making my own sausage since brats at my local supermarket cost $3 to $4 per pound and seem to be about 50% fat; those damn things started a grease fire in my BD once.

I bought an Eastman 5 pound stuffer for $10 on ebay and a electric meat grinder for $5
