Default Question- R2D2 rib cooking question.

OK, I am going to put three racks of spares on the WSM, I am sure I will need both upper and lower racks. Should I rotate them?

Oops, I might have messed up. I ended up cutting the full racks in half and put the thicker ones on the bottom thinking that was the hotter spot and they might end up done at the same time.

Actually the Top rack is hotter on a WSM if you have water or sand in the pan. Let us know how they turn out...
