Default Sunday Night Brisket

It has been a long couple of weeks. I finally went out and got food and stuff for the house and needed some smoke.

Smoked a brisket on the lil tex with my own rub, pulled at 204 and wrapped in foil, towels, and placed in a warm cooler for about 2 hours. It is nice and juicy, on the 'tougher' side rather than the 'falls apart' but still pulls apart easily (as you can see from the part on the bottom that I didn't completely cut through and pulled the slice out)

A few slices off the end is for your pic. It was pretty good and will make for some great lunch tomorrow.

Most briskets are sliced instead of pulled. Looks perfect for slicing.
