As long as I've got so many Poles in one spot, please indulge my intrusion into the Perogi land.
In my early years of marriage, a fine meal was a ring of Polish sausage in a pan of boiled potatoes. My question is I remember the ring being almost red and the sausage emulsified like a hot dog consistency and a snap to the casing. I have looked high and most of low for a recipe that meats (see what I did there?) those components.
Any body have any thoughts?

Are you talking about kiszka sausage? (blood sausage).

Sounds like it might have been just a plain old boiled smoked polish sausage. Gotta have fresh dill on those boiled potatoes though. Had many a meal like that as a kid. Smoked sausage will have more of a hot dog type interior like your Johnsonville type sausages, depending on your grind. Fresh polish sausage will have a texture similar to an italian sausage.

That is a lot on info on kielbasa. Thanks!

My favorite way to eat kielbasa drives my wife nuts.
I split the kielbasa lengthwise and serve it on a hoagie roll with melted cheeses on it and sometimes mustard. I made one the other day. A place called Pat’s Chili Dogs sold this as a cheese Keilbasa sandwich. This is one of those sandwiches you and you friends would stop to get a 3AM after a night out. Last time I ate there was probably 20 years ago and they closed since then.

Makes me curious about possible Polish community out here in ABQ, and what's available this Holiday Season.

Hahaha... That's my favorite way as well. I measure how much sausage to cut based on the length of the roll. Split the sausage, nuke it, add a good brown mustard on the roll. Lunch.

See if you can find a Polish Deli. If not, pierogi are really simple to make, I'd have to find the dough recipe, but it's either three of four ingredients. Fillings are what ever you want to put in them. Mom made meat filling, potato & cheese, fruit, all sorts of stuff. Or Kopytka, basically Polish Gnocchi, also real easy to make. Mashed potatoes, flour, egg.

We had homemade pierogi at his house, made by his mom and grandmother. I was a Southern Boy who had no idea what I was getting into. I learned a lot that weekend. It. Was. Awesome.

We make koldūnia, basically the same thing but with meat. Top em with bacon and caramelized onions or cream of mushroom. With the leftovers I like to pan fry in butter and dip in sour cream. Good job btw.
