Default A wonderful dish!

I have been making it since 1986 (a buddy gave me a Paul Prudhomme videotape-still have it).
Its a dish not unlike chili or even que, you can fool with it the rest of your days, and make it a thousand different ways.
Good old poor folk food. How to take one chicken and feed 10 people.
I have a mountain of recipes, I will pop a couple interesting ones on here sometime. One of my favorites is-get this-hamburger and cabbage!

The sausage was not smoked, it was a last minute decision, was looking for
andouille sausage, but no dice. So, I went with the kielbasa. Will do red peppers,w aht time shall we expect you?

ham cut in about 1/2" cubes
chicken thighs and couple breasts(for wife)
smoked sausage beef
andouille sausage
browned em all before cooking veggies/rouex
wish I was able to find tasso ham

next time I would rather have shrimp before chicken

It does look very good. I would rather have mine slightly moist, rather than too dry. I have had it all ways and as long as it has good flavor, I am going to eat it and not complain.
