Greetings! I recently purchased a New Braunfels Bandera verticle smoker from an estate sale. I think it was made in the mid to late 90s. Great condition. Anyway, totally new to smokers. I have smoked brisket on my gas weber before that always comes out good. I tried pork ribs once that did not turn out so well.
Got the Banders on Wednesday and Thursday I tried a chicken. Came out great. Today I'm doing a brisket. Having a lot of trouble with the fire to hot.
