Default Side dish question

My better half is leaving next month with a group that is heading to China. I have offered to cook for one of their planning meetings this month. I do ribs and beans pretty darn well (according to some biased judges here at the casa) so those items are set. The problem is what other side or sides to do. I'm not that great at tater salad. I need some ideas for sides that will impress but that I can't screw up too bad. Any ideas?

I like to offer some sort of bread, cornbread would be good. Just make the standard box stuff even, poke the top with skewer a bunch, then brush the top with butter and honey.

I also like to offer a cole slaw, I prefer a vinegar heavy Asian inspired slaw. I take a couple heads of cabbage shredded, a couple of carrots worth of shredded carrots, one thinly thinly sliced cucumber all dressed for a couple hours in a dressing of 1 cup vinegar, 2 teaspoons of sugar, 1 tablespoon of soy sauce and a little Worcestershire sauce. Mix it all up together and let sit for a couple of hours. Serve with chopped peanuts on top, maybe some fresh apple slices tossed in.

Here is an excellent corn bread recipe and a picture of it.

Spicy Cornbread

2 Jiffy corn muffin mixes
2 eggs beaten
1 can green chilis
1 can creamed corn
1/2 cup of half and half or 2/3 cup of sour cream
6 ozs frozen corn (optional)
2 diced chipotle peppers (optional)

Baked at 375 degrees for 50 minutes in a cast iron skillet

This cole slaw is soooo good. FWIW, I don't bother with the toasting of the almonds...heck i don't always use almonds and it's still great.

Oriental Coleslaw

Salad
1 - 16oz package coleslaw, or equivalent homemade
1 bunch green onions, sliced
1/2 cup slivered almonds, toasted
1 package Oriental flavor Ramen noodles, broken up, toasted (optional)

Dressing
1/2 cup oil
2 tbsp. sugar
3 tbsp. cider vinegar
1 tsp. salt
1/2 tsp. ground black pepper
1/2 packet of seasoning from Ramen noodles

Combine the dressing ingredients and whisk well to dissolve sugar. In a large salad bowl, combine the coleslaw, green onions, almonds, and ramen noodles. Drizzle dressing over and toss well to combine. Serve immediately.

Slaw, beans and corn bread you have the basics down.
If you want a variation of cold veggies, carrots, celery broccoli pieces and bagna cauda.
It is a creamy sauce that is very rich with lots of garlic in it. It is awesome.

This recipe gets rave comments when I serve it with BBQ.
Bourbon sweet potatoes
  • 3 lbs sweet potatoes. Peeled and cut into chunks.
  • 1 C light brown sugar
  • 1/2 stick unsalted butter
  • 1/4 C orange juice (plus some grated rind)
  • 1/4 tsp salt
  • 1/2 C bourbon
  • Maple syrup to taste
Steam sweet potatoes until just tender. Cool, uncovered. Place in buttered baking dish. Simmer sugar, butter, OJ, salt until sugar is dissolved and syrup thickens. Stir in bourbon. Drizzle over potatoes. Bake about an hour. Baste occasionally. Top with a swirl of maple syrup and Chile Pecans.

Chili Pecans
  • 3/4 tablespoon chili powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 3/4 teaspoon brown sugar
  • 1/8 teaspoon garlic powder
  • 1 cup pecan halves
  • 3/4tablespoon Worcestershire sauce
  • 1 tablespoon Bourbon
  • 1/4 teaspoon salt
Directions
  1. Preheat oven to 275 degrees. Line a large baking sheet with parchment paper.
  2. Combine chili powder, cumin, coriander, paprika, brown sugar and garlic powder in a small bowl. Toss pecans Bourbon and Worcestershire sauce in a large bowl. Sprinkle the spice mixture over the pecans, tossing to coat. Spread the spiced nuts on the prepared baking sheet.
  3. Bake the pecans, tossing every 8 to 10 minutes, until lightly browned and very fragrant, about 35 minutes. Transfer to a bowl; sprinkle with salt and toss well. Let cool.
