Hey all,

I have an 8lb butt that I injected and rubbed with plowboys yarbird in the mini right now and it's running a pretty steady 350 (only for about an hour now). Would you recommend dropping the temp since yardbird has sugar in it?

No need to drop the temperature. Just watch it and wrap when the color looks right to you.

Edit: On second thought, common sugars caramelize right near 350F. Perhaps you should drop down to 325 or so.

Thanks guys, I'll drop the temp - just trying to get it done quickly since I got a late start!
