Default Hanging 3# Tomahawk

Haven’t hung anything since selling my OG-PBC. Wife likes power tools so she drilled a hole for the OK Joe Bronco hanger system. My Fornetto Basso also has a hanger system. Next time. Rubbed with evoo and Naturiffic QSalt.

Good, acceptable. Had it all mapped out. Removed from drum at 127*. Let rest 10-13”. Captured all those seasoned juices. Carved away from bone. Grabbed a beer and the video app on phone rings. Wrapped everything back up tight and watched granddaughter take some first steps. Nearly an hour later the cooking had continued. Also round two of Juice.
There’ll be other steaks, but only one moment like first steps
