Default Cambro camcarrier 300

I got a Cambro camcarrier 300 today at Resturant Depot today. And now I am wondering if I can use a Thermobarrier to seperate raw and cooked meats? I would put the hot cooked on top and cold raw on the bottom. Here is a link to what the thermobarrier is... http://cool.cambro.com/ThermoBarrier...Transport.ashx

Thanks for your advice in advance!

Sir, Captain, permission to point out the obvious? re-read your link...

ThermoBarriers
  • A highly valuable yet economical temperature maintenance tool for caterers.
  • Can be used in most front-loading Cambro Food Pan Carriers and Carts.
  • Use to separate hot and cold food held within the same compartment.
  • Or use to minimize empty space and food temperature loss within a partially loaded compartment.
  • Can also be used to separate full and empty food pans held in the same compartment.

I know... But I wanted to know if the raw meat with cooked meat in the same container (seperated by the termobarrier) would be a problem.

I would opt to say no. With the barrier in place there would be no cross contamination of the meats or temp variation between the two chambers. As you mentioned before Hot on top and cold on the bottom.
