Default Suggestions for Homemade rolls/buns?

I'm having a party tomorrow night and will be cooking up a brisket and butt for about 20 people. I've got a slow day today and am in the mood to do some baking. Does anyone have a good recipe for homemade sandwich rolls or buns? I've made parker house rolls for this in the past and enjoyed them but am wanting to try something new.

Go buy Sweet Hawian rolls and make sliders with them. Use today to make some variations of cool slaws to dress the sliders with.

I don't buy bread & rolls I bake my own this is the recipe I use for bbq sandwiches and burgers
Sandwich Rolls
yield: 6 hamburger six rolls or 1 dzn dinner rolls

3 cups All purpose flour
1 tsp salt
2 tsp or 1 pkg of yeast
1 1/8 cup warm water
2 tbl shortening
1/2 tsp honey

Dissolve the honey into the warm water in the bowl of your stand mixer and sprinkle on the yeast sle stand for 15 min

Add 1/2 the flour and add the paddle attachment and mix fro 5 min
Slowly add the remaining flour allowing to incorporate after each addition
When the dough pulls cleanly from the sides of the bowl and the bottom add teh shortening and knead on med for 5 min.
Form into a ball and place into a lightly oiled bowl cover with plastic wrap and allow to rise fro 1 hr
Punch down reform the ball divide into 1/3 rds and divide each 1/3rd in 1/2
form each piece into a ball by cupping it in your hand and rolling it in a circular motion on the countertop repeat for all pieces
grab a good daub of shortening and coat each ball and press flat use your thumb an make an indentation in the center and place it on a lightly greased baking sheet. Equally space the rolls about 1" apart cover with plastic wrap and allow to rise until double about 45 min.
bake on the center rack in a preheated 400 deg oven 15 min.
allow to cool before serving
Cooks notes:
If you want a sweeter dough add 3 tbl sugar
If you want a crumb like that of a commercial bread repalce the water with milk and add 1 egg and 3 tbl sugar

Thanks bludawg, that's exactly what I was looking for. If I'm doing my math right this will make 6 rolls?

Edit: And I just read the top of the recipe and it states clearly that this makes six rolls. The lesson as always, I'm an idiot.

I like the sweet Hawaiian rolls suggestion above, if you want to make it yourself here is a recipe below. I made them stuffed with PP for a TD and they are amazing.

1/2 cup warm water
1 teaspoon sugar
2 packets active dry yeast
1/2 cup bread Flour

Dough
1 cup milk
1 stick butter
1 cup sugar
1 teaspoon salt
1 tablespoon grated lemon peel
7 1/2 to 8 1/2 cups unbleached bread flour
4 eggs plus 1 egg yolk (room temp save the 1 egg white for wash)

Egg wash
1 egg white beaten with 1 tablespoon water

The sponge: Dissolve the sugar and yeast in the warm water Stir in the flour and set aside until it rises and is bubbly.

The Dough: Scald the milk. Remove from the heat and add the butter, sugar, salt and lemon peel. Stir to dissolve and then let the mixture cool a little. Beat the eggs until frothy. Add them and the milk mixture to the sponge. Stir in 6 to 7 cups of flour, one cup at a time, until the dough pulls away from the sides of the bowl. Knead the dough, adding only enough flour to keep the dough from sticking. When the dough is smooth and satiny (about 10-15 minutes) place it in an oiled pot. Cover the pot with plastic wrap and a towel. Let the dough rise in a warm place for about 2 hours. Punch the dough down and knead again for about 5 minutes flatten the dough then fold it several times cover at let ride again in the pot for another hour

Remove dough and cut off pieces to form as loaves or rolls this recipe yielded the 5 buns plus one 8” loaf slit the tops, brush with egg wash and let proof for another 45 minute to an hour. Bake at 350 the buns took about 15 minutes and the loaf 35 minutes.

Here's the one I use.

    • 1 cup milk
    • 1/2 cup water
    • 1/4 cup butter
    • 4 1/2 cups all-purpose flour
    • 1 (.25 ounce) package instant yeast
    • 2 tablespoons white sugar
    • 1 1/2 teaspoons salt
    • 1 egg

    1. In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
    2. In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
    3. Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
    4. Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
    5. For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.
