Default Christmas in July...

You have always heard the term " Christmas in July" used by retail stores to advertise a huge savings. Here I am not advertising a sale, but I actually got to use a present that I received for Christmas from my nephews. The gift that I am talking about is the Rib-O-Later!!!! After consulting with "cowgirl", she gave me a brief tutorial and referred me to her posting on how she assembled her Rib-O-Later on her UDS.

The built was actually very easy and didn't take very long to get it up and running. Here are a few pictures of the cook we did for the 4th of July.

It isn't a necessity but like much of the stuff in our arsenal, it is helpful and IMO, I believe that it provided a more even cook and made for better space management. One thing I have learned is that a good cook can make do with the bare minimums, but at the same time if you can use aids to help, why not?

That's a cool toy. I have see several pics of them in action but have never seen one live.
The pics of the ribs always look good.

Yeah, usually I go with spare, but this time tried the baby backs and found them so much easier to prep. Membrane came off easily and mostly in one piece and they were nice and meaty.
